St. Patrick’s Day is one of our favorite holidays around here. It helps that we have a little bit of Irish ancestry in our blood and we all have Irish names. While the St. Patrick’s Day we celebrate here in the states has become very secular compared to the St. Patrick’s Day celebrations of Ireland of old, we still like to have a lot of fun with.
Starting with all things green of course and adding in a some green Mickey Mouses (mice?) and you’ve got an award-winning combination! One of the iconic treats of Walt Disney World has always been the (yummy) Rice Krispie treat. We wanted to make them at home with a little Mickey Mouse and St. Patrick’s Day twist. It goes without saying, the one thing that makes a Rice Krispie treat better is the addition of Mickey Mouse. Without any further ado, let me introduce to you the Disney-inspired Walt Disney World St. Patrick’s Day Mickey Mouse Rice Krispie treat made with jumbo marshmallows!
St. Patty’s Day Rice Krispie Treats with Jumbo Marshmallows
9″x13″ Pan (Sprayed with Cooking Spray)
Spatula
6 Cups Rice Krispies
10 Oz Jumbo Marshmallows
3 Tbs. Butter (Vegan Butter Substitute Works Well)
1 C. White Chocolate Melting Wafers
Green Food Coloring
Betty Crocker Decorating Gels in Green, Yellow and Red
Step 1
First things first, gather up all your supplies! For the marshmallows you can use either mini marshmallows or regular sized marshmallows. You can skip the decorating gels too if you want, but that’s how you add the special Mickey Mouses to your Rice Krispie Treats!
Step 2
Melt your butter over medium heat on the stove. Add in the marshmallows and stir until melted and mixed well with the butter. Remove from heat and add in Rice Krispies, stir until incorporated.
Step 3
Spread mixture in your 9″x13″ pan and press down with your spatula. While the Rice Krispie Treats are still warm they should be pretty easy to form to the pan. Allow to fully cool inside the 9″ x 13″ pan.
Step 4
Once cooled, cut into whatever sized you want and set aside. We liked to make them rather large so we can include lots of decorations. Smaller means you can eat more though. You decide what’s the best fit for you!
Step 5
Take your white chocolate melting wafers and melt down in the microwave in 30 second intervals. Once melted add in about 3-5 drops of green food coloring. Mix well until color is evenly distributed.
Step 6
Take your pre-cut Rice Krispie treats and dip into the melted chocolate. I found that you need to use a spoon to bring the chocolate up the sides of the Rice Krispie treat.
Step 7
Let chocolate cool completely, about 15-20 minutes, give or take. Once the chocolate is cooled, you can get to decorating adding in hidden green Mickeys, shamrocks and pots of gold! Basically, whatever St. Patrick’s Day decorations you want to add. This was our favorite part of the project! Well, decorating and eating the treats!
Step 8
Once everything has cooled and hardened (the decorating gels take a little longer to set), enjoy your rice krispie treats! While these are festive and best enjoyed around St. Patrick’s Day and within two days of making, you can freeze them! Just place in the freezer, in an airtight container and separate by waxed paper in order to prevent sticking.
