Copycat recipes are the best.
Basically they allow you to take the amazingness form outside of your home (aka a restaurant, theme park, carnival, and so on) and bring it into your home.
All without having to LEAVE your own home!!
It doesn’t get much better than that.
Except maybe when you have a modified DIY recipe that allows you to enjoy a ‘copycat’-ish recipe from home without having to go and buy anything special to complete the recipe.
What exactly am I talking about?
Well, let’s look at the world’s most perfect cookie (and I’m talking about the whole world, not just Disney World here.).
The Jack-Jack Num Num cookie.
So much ooey, gooey chocolatey goodness to love served up to you in a giant cookie.
Served warm at Disney World or Disney’s California Adventure park while you are enjoying fun in the sun.
It doesn’t get any better than that, does it?
I’m going to go ahead and answer that question for you with no it doesn’t!
Yet, despite the perfect that composes this cookie served at the Disney parks, one of the key components of the cookie is a little trickier to get.
What is that item? The wrapper.
Yes, you could purchase some from a baking supply store or even search on Amazon and probably be able to track down a few sufficient wrappers.
However, instead, you could plan to make ‘mini’ versions of the Jack Jack Num Num cookie and use cupcake wrappers.
Eh?
The cupcake wrappers allow you to stay home if you already have them on hand leave the comfort of your home (one of the perks of copycat recipes, like we discussed above) to enjoy these cookies.
Plus, you might have all the ingredients you need on hand right now! Win-win!!
Making things even more simple? We used another creative cookie hack and made these cookies with a box of cake mix! So, so easy!
If you’d rather not use cake mix, go ahead and take your favorite chocolate chip cookie recipe and just add in even more chocolate chips.
The trademark features of the Jack Jack Num Num cookie are in the warm chocolatey-ness that flows from it. If you serve this cookie warm and with extra, extra chocolate chips, you’re onto something good. Something really good.
DIY Jack Jack Num Num Cookies
Generous Cup of Chocolate Chips (Split into 3/4c and 1/4c)
2 Eggs (We Used Our Favorite Flax Egg Recipe Found here: Minimalist Baker)
1 Cup Creamy Peanut Butter
1/4 C. Vegetable Oil or Soften Butter
3 Tablespoons of Flour (We used whole wheat pastry flour)
2 Tablespoons of Water
***Disclaimer: We decided to add a little bit of peanut butter to our cookies, which the original Jack Jack Num Num cookies do not have. You can always leave it out and adjust your other ingredients. We felt the peanut butter gave the cookies a nice thickness that was more reminiscent of the Jack Jack Num Num cookies featured in the parks.
1. Step One
Gather up all your supplies!
2. Step Two
Preheat Oven to 375 degrees F.
Mix all your ingredients together.
Starting with the butter or oil, peanut butter. Add in eggs. Once incorporated, add in the cake mix and flour. Add more water if dough is dry. Add in 1/2 of the 3/4ths of the chocolate chips.
Optional: Add in brown sugar (approximately 1/4 c.) for added sweetness.
3. Step Three
Line cupcake/muffin tins with cupcake liners. Don’t grease or spray the cupcake liners.
Add in cookie dough and smoosh into the liner. Add a generous amount of chocolate chips to the top of each cookie.
Make sure some of the chocolate chips are pushed into each cookie/cupcake.
4. Step Four
Bake for 8-12 minutes, checking to see that the tops are golden but the bottoms aren’t burnt.
Due to the dough being placed in the cupcake liners, these cookies tend to want to burn a little quicker on the bottom.
Let cookies cool for 1-2 minutes and enjoy! Excellent with a tall glass of milk! Just like Jack Jack would like!
Plus, these might be slightly addicting. So, sorry ahead of time for a new habit of eating too many of these that you might have to break!
